What follows are foods, snacks, goodies and treats we developed to serve our guests at The Inn. Increasingly guests want to purchase these to keep in their room during their stay, to take home for themselves, or to bring or mail to family and friends as gifts. The Southern Hummingbird
It’s the most requested cake recipe in Southern Living magazine history and frequents covered dish dinners all across the South, always receiving rave reviews. The recipe was submitted by a Mrs. L. H. Wiggins of Greensboro North Carolina and consists of two layers of cake full of chopped pecans, crushed pineapple, and mashed bananas that are filled and frosted with a delicious cream cheese icing. Chocolate De Cadence
Chocolate layer cake with chocolate frosting and chocolate shavings. In 1828, Conrad Van Houten of the Netherlands developed a mechanical extraction method for extracting the fat from cacao liquor resulting in cacao butter, a compacted mass of solids that could be sold as it was “rock cacao” or ground into powder. The processes transformed chocolate from an exclusive luxury to an inexpensive daily snack. A process for making silkier and smoother chocolate called conching was developed in 1879 by the Swiss Rodolphe Lindt and made it easier to bake with chocolate as it amalgamates smoothly and completely with cake batters… and the world has never been the same. Elvis Beard’s Red Velvet
James Beard’s 1972 reference American Cookery describes three red velvet cakes. The reaction of acidic vinegar and buttermilk tends to better reveal the red anthocyanin in the cocoa. Before more alkaline “Dutch Processed” cocoa was widely available, the red color would have been more pronounced. This natural tinting may have been the source for the name “red velvet”. Mama Mia Marie’s Biscotti
18 homemade organic pistachio biscotti. Twice-baked biscuits originating in the Italian city of Prato. “Biscotti” is the plural form of biscotto. The word originates from the medieval Latin word biscoctus, meaning “twice-cooked/baked.” It defined oven baked goods that were baked twice, so they were very dry and could be stored for long periods of time. Pliny the Elder boasted that such goods would be edible for centuries. Such nonperishable food was particularly useful during journeys and wars, and twice baked breads were a staple food of the Roman Legions • 36

The financier is a light, moist teacake, similar to sponge cake, and usually contains almond flour, crushed or ground almonds, or almond flavoring. Financiers are often baked in shaped molds. The name “financier” is said to derive from the traditional rectangular mold, which resembles a bar of gold. 24 homemade chocolate chip cookies. The chocolate chip cookie was accidentally developed by Ruth Graves Wakefield in 1930. She owned the Toll House Inn, in Whitman, Massachusetts, a very popular restaurant that featured home cooking in the 1930s. Her cookbook, Toll House Tried and True Recipes, was published in 1936 by M. Barrows & Company, New York. It included the recipe “Toll House Chocolate Crunch Cookie”, which rapidly became a favorite to be baked in American homes. • 12

18 homemade Blackstrap molasses cookies. The term Blackstrap molasses is an Americanism dating from around 1920.The third boiling of sugar syrup yields blackstrap molasses. The majority of sucrose from the original crystallizes through this process, though the calorie content of blackstrap molasses is still mostly due to the small remaining sugar content. However, unlike refined sugars, it contains significant amounts of vitamin B6 and minerals, including calcium, magnesium, iron, and manganese; one tablespoon provides up to 20% of the recommended daily value of each of those nutrients.
